The onsite Restaurant Merlot led by executive chef Aaron Jose showcases the best of seasonally driven paddock-to-pate dining. With a pared-back interior floor-to-ceiling windows that frame both the vineyard and refurbished courtyard, it’s a placea passion for everything delicious about the High Country comes to the table.

Divided across two levels, the rooms and suites overlook manicured gardens, each framing views of the vineyard or distant alpine peaks. With a choice between Sunrise and Sunset rooms and suites, or the indulgent Balcony and Garden suites, guests are spoilt for space. Each air-conditioned space features polished concrete floors, bespoke timber joinery and a luxurious bouclé daybed. The in-room mini bar comprises an enticing assortment of locally sourced wines, beer and snacks.

The hotel day starts from hour 15:00 and ends at 10:00.
